There are days (like Sundays), that we just feel like baking…
But with holiday approaching faster and faster (YAY!), chocolate fudge cake baking is not an option, so we opt for a healthier version – a flourless, gluten-free banana loaf.
2 tbs of honey
300 grams of ground almond
1/5 tea spoon of cinnamon
1/4 tea spoon of baking powder
Ground nuts (we used walnuts)
Seeds (we used a mix of sunflower & pumpkin seeds)
How to make:
Mash up bananas in a bowl (my little one loves using the potato masher)
Add eggs and honey and whisk until thick
Then add all the dry ingredients, folding in.
Pour the mixture on to the buttered bread loaf tray and bake in the over at 190 degrees for around 30 minutes.
We sprinkled the top with some seeds as well, so when the banana loaf was ready, the seeds added a bit of crunch…
