With so many mince pies and hot chocolates kicking about, it’s hard to say no to those yummy festive treats isn’t it? But it’s such a “fragile” time of year and we need as many nutirents as we can possibly can into our system, so I’ve decided to share a quick and simple exotic winter salad recipe with you guys… If there’ such a thing? Oh and my new favourite thing – 100% organic Birch water! Yep, that amazing drink that comes from thees and they say it helps to detoxify your body, cure bronchitis and even eliminate cellulite – can I order 200 cases please Sibberi?

So for your exotic winter salad you need:

1 can of mixed beans (I used organic)
1 mango
1 apple
1 avocado
Spring onions
Lots of herbs (I used coriander and parsley)
1/2 lime – juice of it

PS. Tomatoes are just props, haha but why not add them into the dish as well?

Dress with olive oil, lime juice and balsamic vinegar and parmesan and of course you can “festive it up” with some chutney, more cheese and maybe some wine? Eat colourfully…
