Kenwood Chef - Secret little starsKenwood Chef - Secret little stars2Kenwood Chef - Secret little stars4Kenwood Chef - Secret little stars0I wanted to make courgetti, but I don’t own a Spiraliser, so it was either going to be a grater (really?), a vegetable peeler or my Kenwood chef. Of course I went for the chef – it’s quick and easy, but because I was so hungry (that’s my excuse anyway) I overlooked one small thing – the courgetti was never going to come out in long strings was it? But lets pretend I knew that and wanted to call my dish courgetti-celli instead ok? Ha…

I added a some gluten-free spaghetti to the dish because not only I have a hungry bears to feed, but to be honest, the short cougetti-celli did look a little bit mushy on it’s own. Oops…

So what do you have courgetti with? You can have it with whatever you want and although I made mine with shop-bought pesto and added some herbs and caramelised tomatoes to the pan, I recommend making your own pesto, but with avocado! Recipe for that later…

So here’s what you do:

1. Make noodles, spaghetti or vermicelli out of your courgettes with whatever tools you have.
2. Lightly fry them seasoned until all the juice evaporates.
3. Add pesto, paste, herbs and any veg you like.
4. Add any cheese you love, some more herbs and Voila!
