Long time no HEALTH posts, but I’ve discovered a really tasty, filling, packed with fibre and protein energy bars recipe which I think you’ll like. They are fantastic for breakfast with your coffee / tea or as a snack also, but beware they are really filling and that’s what I love about them – ideal solution for my sweet tooth, especially in the summer. These protein energy bars are so easy to make without any baking.
– 200g of coconut milk
– 100g of honey
– 100g of peanut butter
– 200g of oats (add more oats if your mixture isn’t thick enough)
Just mix all the ingredients together, press the mixture firmly and evenly into a paper lined tray, chill for an hour or so and divide into bars – it’s that simple! You can always add dried fruit, seeds and nuts too…Feel free to add vanilla, cinnamon or swap peanut butter for almond butter – it really depends on your tastes, preferences and in some cases allergies.
Great for those who don’t have time for breakfast in the morning – just grab a few for the road!
