I don’t know about you, but I’ve become this crazy snack lady during the day and wine lady at night. Anyone else? And there aren’t that many fresh ingredients as we don’t go to the shops every day.
The other half sorted out the kitchen yesterday and gutted all the cupboards and drawers – hurray! I spotted way too many boxes of dates that we’ve bought with good healthy intentions but they just sat there untouched. And then I remembered how tasty dates are when stuffed with peanut butter and it couldn’t have been a more perfect time. All ingredients are already in the cupboard and will satisfy any sweet tooth. Sprinkle with a bit of sea salt for good measure and / or some nuts, seeds and cocoa powder. It’s all pretty much self-explanatory – you take out the pip and stuff with peanut or any other of your favourite nut butter. Enjoy! I’m away to pour a glass of wine.
